Pecan, Walnut, Honey and Avocado Granola

Ingredients:

1/2 cup raw pecans, divided
1/2 cup raw walnuts, divided
1 1/2 cups rolled oats
1 1/2 cups instant oats
1/2 tsp. Salt
1/3 cup coconut sugar
1/3 cup honey
1/4 cup avocado oil + 1 tbs set aside
1/2 tsp vanilla extract

Directions:

  • Preheat oven to 350°

  • chop your pecans and walnuts 

  • Pour the oats, salt, coconut sugar, and nuts into a bowl, stir to combine

  • In a separate bowl combine honey coconut oil and vanilla extract and heat up for 40 seconds in the microwave.

  • Poor honey mixture all over you’re oat mixture, stir to combine

  • Line a baking dish with aluminum foil, add the remaining 1 tbs of oil to coat foil (to ensure no sticking) pour mixture evenly onto a lined baking sheet (aluminum foil, parchment or Silpat)

  • Bake for 5 minutes, stir and spread back into even layer. Return to the oven to bake for an additional 5 minutes or until golden brown around the edges

  • Pour cooked mixture into a casserole or cake pan lined with parchment paper and press firmly. Let fully cool.

  • After cooled completely break the granola clusters with a knife and store in an airtight container
